Banana Chocolate Chip Oat Muffins

CMW and I bake at least once a week, she is great helper, doesn't make such a huge mess and we get something yummy after it's been in the oven. I like making muffins, especially ones that I think are 'good for you' and I rediscovered this recipe. I had made them so often that it was time retire the recipe for a short time, well that times was too long. So now they are back in the making and I am passing the goodness onto others. You'll just have to try them for yourself!

Banana Chocolate Chip Oat Muffins

1 c. quick oats
3/4 c. all purpose flour
3/4 c. whole wheat flour
2 tsp. baking powder
1/2 tsp. baking sods
1/8 tsp. salt
2 tbsp. butter, softened
1/2 c. brown sugar
3 medium ripe banana, mashed
1 egg
2 tbsp. unsweetened applesauce
1 tsp. vanilla
3/4. c. mini chocolate chips.

Bake @ 350 degrees, 15 -20 minutes, cool 5 minutes before removing, about 1 dozen

Large bowl: combine oats, flour, b. powder, b. soda, salt, set aside
Small bowl: beat butter, b. sugar, then add the banana, eggs, applesauce & vanilla
Stir the wet ingredients into the dry until moist
fold in the chocolate chips

Grease your muffin tin & fill 3/4 full, cook and enjoy.

We hope you devour these yummy treats as fast as we do at our house. :-)

Sounds really yummy! We ALWAYS have overripe bananas and eat a LOT of banana bread and muffins, but are in great need of a new banana recipe, so thanks! Plan to make them tomorrow, as I have a whole clump of way overripe bananas waiting to be baked into something. The only ingredient I can't get here is the applesauce, but oil should work, right? Thanks, dear friend!

yes, i think the applesauce is trying to make the recipe 'more healthy' but when want to cut some oil out i use it, so i assume cutting it in would work too!
